Is there a way how to format attributes in an email? For example, field of a type "date" we want to change how is it formatted in an email.

No, unfortunately not. Before the 1705 release no specific formatting for the attribute fields was realized. But with the 1705 release a formatting depending on the contact's data will be introduced.
