I don't know your original release. If you are on SAP R/3 Enterprise (4.7) or higher you can unicode check and enabled you programs at that release.If you are on SAP R/3 4.6x or lower systems you will probably have to wait until after the upgrade to mySAP ERP 2005.
By the way you'll have to check your programs after your upgrade anyway as there are more stringent unicode related checks built into the ABAP runtime.
I'm assuming that you are not running MDMP. This is a difference situation and you'll have to take a difference tack in you are on SAP R/3 4.6x or below.

I don't see any problem in that approach at all. You can always upgrade without UNICODE and later on do the UNICODE remediation as a separate project. For one of the clients I managed recently, we followed the same approach i.e. first we did the upgrade and then later on the client went on for the UNICODE remediation.
