Sort variants

hi need to sort the payroll checks by personal area or cost center or employee name. How do i do this?

i went to tcode O7s1 and i can create variants here but where do i pick them and i cant see the employee name etc here, how do i add them

Our vendor checks print in alphabetical order, Where is this defined?
