We are moving to a hosted S/4 HANA Finance 1610 solution from an on-prem ECC 6.0 solution.
We do not want to introduce FIORI yet. Will SAP GUI 7.40 still work?

Yes, SAP GUI 7.40 will be fine if you don't want the Fiori theme.
