Create a Factory calendar and assign it into Capacity header tab in work center.

You can do it - but be aware that this can have side effects if the plant runs with another factory calendar in terms of expected GR date, material availability and for your inbound and outbound shipping.

I suggest that you do proper testing of the solution.
