Here is some more information on the Unified Vendor Model but probably the easiest way to explain the difference is that the Unified Vendor Model is a subset of capabilities of the full S/4 Business Partner model, which looks beyond the relationships of just vendors into partners and customers, where SAP Ariba is not as interested if you are not buying from that entity.
