Remove or Concatenate Time/Date Stamps and employee info

I have a text string field. it is a series of comments and time stamps. I am looking for a formula that will do a 'find and replace' to remove all date stamps and employee names. Here is an example of the text:

female near MCDONALDS/ 484 from ace/ mh / hair up/ blk clothing/ 3 bags with here
10:06:33 02/18/2022 - EMPLOYEE 1
sitting at bus bench/ has multi meeter in one of her bags
10:06:42 02/18/2022 - EMPLOYEE 1

The time/date stamp will always be in the format HH:MM:SS MM/DD/YYYY. the employee will always follow the date with " - "
