I have a requirement to setup a tier of approval process for physical inventory stock/count results post.

How to achieve this ?

You can design custom solution with approval within if single step/ multiple steps needed after counting of physical inventory and before posting of physical inventory. After approval or final approval - physical inventory will post calling MI07 transaction code!
