As you probably already know, ESEF new regulation require the following action:
Guidance 1.1.2 Multi-language reports [last updated: July 2021] [new]
When an issuer prepares its annual financial report in two or more languages, those two or more reports should be submitted as two or more separate zip files. Please refer to Guidance 2.6.1 for indications about the file structure of each report package.
What is the procedure to get one zip file per language in SAP DM? Do we create a period per each language used in report and then modify each extended taxonomy in order to define just single language labels?

Actually, this is already possible in DM
Let's say you need to report in both English and Spanish
You would a single data-cache report (as the data is the same of course)
However, you would have 2 Word reports (one in Spanish, one in English) and also 2 iXBRL instances (one linked to the English Word report, the other to the Spanish one)
In the configuration, you specify the language used, see screenshot below
As you now have 2 separate instances, you also get 2 separate zip files
