Could someone help on how to extract/copy the SAP tables data using JDBC driver?

From what software? To what database system? Note that you can find many information in the Web.

Using Spark i wanted to extract/copy data from SAP ERP

In fact, it's not a SAP ERP question at all, because SAP ERP (ABAP-based) software uses databases which support JDBC (not sure for all). Just ask your administrator what database is used, and connect directly Spark to this database. No need to worry about SAP.
