Sales quotation approval workflow

Dear Experts,

can we configure two different workflows on the same document type.

workflow 1: for document creation ( 3 levels of approvers )

workflow 2: for document change ( 5 levels of approvers )

I need this requirement for both sales quotation and sales contract.
