manage work item priority

During the course of regular business there are some business documents that are more pressing then others. When an approving manager handles the approval requests in the 'My Inbox' APP, all work items are set with a priority of 'Medium' There is a filter on the priority.
How can a work item be flagged by a user as a Higher priority ?
