What is the best practice to manage date of recruitment and date of departure for each worker.
should I few date dimensions?
how can I connect between them and calculate the seniority of a worker?

Are you planning to connect any HR system with SAC (like Successfactor or HCM ).. As there are prebuilt business content available in SAC (Content Network) for rapid deployment.
Though you can start from scratch as well. Takes longer and have to pay attention to best practices around SAC objects.

you can sill sue them as a reference point. You can see how they are interconnected and they most liley come with sample data. In other words you can get some ideas around KPI's to consider. How data fields are used around a particular KPI etc.
