The senders mail address is the one which is maintained in SU01 for this user. The user itself cannot change it via SU3, only an administrator in SU01 can do this. Otherwise, the user could send a mail with another sender then himself which would not be ok. Imagine someone sending an 'unfriendly' mail to the CEO of your company under your name 😉
