I actually have 2 issues with the below picture
the first one his how to take out the description (it happen in some of the tables and in some it doesn't appear)
the second issue - and the important one - is how can I change the version order?
I want it to be actual forecast and budget after
How can I do it (these are not restricted columns)

Version description issue: I've seen the same happening on my end. It's a clear product bug in my opinion.
Version ordering: 2 ways possible, none are perfectly suitable... so please keep raising this with SAP representatives because it's major set-back for planning customers.
1) name your versions alphabetically in the order you want them to show up
2) use table > forecast layout where you can specify 'Look back on' version, 'Look ahead on' version and at the very bottom, you can add additional versions

the thing is that I want the years to be flexible and with a time hierarchy view (years or months),
that's why I don't want to use a restricted measure

You have tried the date dimesion when creating your model, but you must indicate a primary date or it is the real date or the projected date in your case I think you want the date to be projected to compare with the real
