That's a big question, dependent on a lot of things.
I recommend taking the free OpenSAP courses on the topic, provided by SAP experts:
- https://open.sap.com/courses/s4h19 (announced to start in September 2020) - https://open.sap.com/courses/s4h14 (an updated course is planned for Q4/2020) - this one starts with conversion (AKA Brownfield), recommend starting there today
