We are upgrading from 1610 to 1909. I want to know the Transactions and objects that are Obsolete from 1610 and also how is this going to impact Fiori Security.

A simpler way to identify the differences will be to use the Simplification Item Catalog. You can access the same from https://launchpad.support.sap.com/#/sic/overviewWithfilter.
Select S/4HANA 1610 in Source Validity and S/4HANA 1910 in the Target Validity. Additionally, you can also select the FSP release in the app. The filtered list can then be downloaded and you can then use the Simplification List and the 3 Months ST03N to check for the specific transactions that are going to get impacted.

There is no consolidated list for it. However, you can consolidate it from Simplification List of S/4 HANA 1909.
If you wish to know it based on your transaction usage, perform readiness check (for S/4 HANA 1909). Ensure the ST03N has three months of transaction history to create accurate simplification item check for your system.
Once the system is upgraded or converted to S/4 HANA 1909, as a part of follow-on activities for authorisations, you need to take care of obsolete transactions. This list you can see from transaction SU25 - 2D Display changed transaction codes in new system.
