We have a requirement to display the language name instead of language ISO code in product cockpit editor area for product description.

I am not sure it will work, but did you already try to set the name/description on the LanguageModel in the backoffice?

I don't think it's going to work. ISO codes already have a label. I think you would need to create a customized widget for this.
