If your hybris is running on latest versions, I recommend to try Backoffice. Backoffice NG framework is easy to use and customize.

I think you should write some more information for us to clarify your problem.
For general, please refer to Cockpit Framework and go through the links on the left panel. There are a lot links which is about how to configure/cutom a cockpit.

How to remove a section or header from cs cockpit? For eg: I do not want cart to appear in header options. Or I do not want user to modify an order.
