Which authorization object to use to hide the price field into item overview (trx: ME23N)?

No authorization object for hide the price field in ME23N.
For hide the price field in ME23N, you can create screen variant using tcode SHD0. After that, you assign that screen varian to specific user.
For sales side, there is an OSS note 105621 and I feel, you can take the inputs from there and apply the logic which should work for MM side also
