can you extend an SAP standard enterprise service

Hi,

I am looking at an SAP standard enterprise service like "ECC_SALESORDERITEM001QR". Is it possible to extend a service like this? For instance each item will have some variant configured characteristics which I want to include. How would I go about doing this?

Any advice or pointers to useful links would be much appreciated.
