Is it possible to change the default export folder (i.e. for exporting portal content), for example to a shared drive? We would like to be able to export epa files from DEV/QA directly onto the Production server, ready for import.

Yes it is. In fact this is the recommended transport process. There is a PDF available on SDN that details this. If you are on Unix you would just have to export the export folder and mount it in QA and Production.
