Hello Bruno,
In your second screenshot for Fax and E-mail setting, I see the e-mail address which is maintained as default sender maintained again in "Send all e-mails to the the address" option.
So no matter which e-mail address you maintain in your blast, it will be sent to the e-mail maintained in this checked option which again is same as the default sender. Try changing this, check and confirm.

Try below configs:
1. Change the Default Sender Address to the default address (DoNotReply@my312654.mail.crm.ondemand.com).
2. Change the radio button to select "Send all e-mails to business partners".

I have not tried E-mail blast but I believe this will also need your Mass E-mail activated. Did you get it activated? However you can send a test e-mail to verify that the automatic sending of e-mails by the system has been set up correctly using Send Test E-Mail option under Fine Tune Activity E-Mail and Fax Settings.
