With an SAP HANA database online and savepoints writing to the data and log volume areas, is it still advisable to backup these file system directories ? My understanding has always been you never backup "live" data and log files, cannot be used for recoveries, i.e., Oracle.

Typically for a HANA system we have multiple data files(one per service), the file system backups for data and log volumes cannot be in sync(like a HANA based backup) and may not be used for recovery. Besides I have not seen any documentation from SAP that confirms such file system backup recovery is supported
If you have a regular data backup for the HANA system it should be sufficient for recovery. Log backups will be useful for point in time recovery
Keeping such file system backups(for any reason) is a performance hit on any Database(SQL Server, Oracle etc...) and most organizations define exclusions to avoid such files backups
