Piyush,

Your most important reference to SAP (whether R/3 or APO or anything else in SAP) is SAPs online help at help.sap.com.   Start with

Production Planning and Detailed Scheduling (PP/DS) - SAP Library

Demand Planning - SAP Library

Supply Network Planning - SAP Library

Configuration is now all documented within SPRO itself.

There are some nice books in at SAP Press   SAP PRESS

There is also SAP Training
SAP Training and Certification Shop

Which is typically available either through e-courses (online) or in several locations found in many countries.

I suggest that if you intend to make a career of SAP, you will have great difficulty unless you first obtain a Service Marketplace ID.  This gets you access to materials and resources without which it is an uphill battle to create and manage any SAP solutions.
