Is there a standard way of calculating an Opportunity chance of success based on a survey calculated score (with "Chance of success" field automatically populated)?
The requirement is similar to how standard CRM on premise works.

No. It's possible for Leads via a workflow rule but not for Opportunities as the Score condition is not available for the Opportunity object
