can it be in phases?

I did not understand your question, especially Bigbang.
If you need to know the how SAP ERP is implemented in Small companies not only Big companies for this, answer is how capable their business is doing and how much they can effort of SAP Licence and support cost.
What is the ground reality- Please explain bit more what do you wan to know.
what is the experience of consultants/clients- for any implementation experience is a must and it depends on the areas to be choose.
what is the experience of consultants/clients- if you looking for implementation partner than again it depends on the company to choose and how vendor is offering to save some money.
Finally- when you need to know something about SAP please be clear that what you need and what do you want.

Very open ended question which will be difficult to answer here. It depends what modules you are implementing and what is the company structure? manufacturing, retail, service etc all this need to be considered.
if you can narrow down what you are trying to do then it may be possible to certain extend to answer your question.
