Also from then screen shot, Ee PF contribution, it is showing 1058 + 200 both are with +ve sign and Coupon Deduction is showing -Ve. So, 1258 - 500 = 758.00. Check the Pay statement settings for Coupon deduction wage type in PE51 and change the sign.Check the deductions window in cumulation IDs and change the sign. Run the payroll to verify if everyhting is fine.
If pay statement set up is ok, you should check the Wage type characteristics for COupon Deduction in T511.

You just need to change Canteen Deduction Wage type Its clearly indicating Negative Sign All you have to do You just need to change Canteen Deduction Wage type in PE51
1000 is not adding because
1058 + 200 = 1258
Canteen Coupon Deduction = 500
1258 - 500 = 758
Check Form Layout Clearly

What I understand from your screen shot that your PF & P-Tax amount is added and getting canteen deduction is getting deducted from the total.
Its because of your negative amount in payslip.
go to pe51, check deduction window, find out which pTyp & Ctyp you have used there for catneen deduction wage type,
Come back & select line layout,
if you have copied from in01 then LT is 01 & CT is X,
double click on BTERG and in print option block change the conversion either into 19 or 54.
you will find your amount in neutral sign
