As far as I have researched, there is no defined option to extract data from universe (.unx or .unv) and export to a desired format using java sdk.
However, I would recommend to log a support ticket with SAP Support to get confirmed information on the same.
In BO XI 3.1 universes (.unv), universe manipulation is only possible using COM libraries. There is no Java SDK available for the same.You would need to write the code in VB or C#.
