Hi,
You can UDF in Banking module through the path:
1. Tools->Customization Tools->Select User Defined Field -Management
2. In UDF management window, Select Payment Category and then highlight the field for adding new UDF.
3. Click ADD button, to create new UDF

Under UDF management form, there is Payment category. That is matching Banking module.
